- 1 medium tomato, sliced
- 2 cups fresh spinach or lettuce
- 1 tablespoon butter
- 1 teaspoon cooking oil

Fried Bologna, Egg & Cheese Sandwich
- 2–3 slices beef bologna
- 1 large egg
- 1 slice American cheese
- 2 slices white bread
- 1 teaspoon butter or cooking oil
- Salt and black pepper, to taste
- Mayonnaise or hot sauce (optional)
Chili Cheese Hot Link Sandwich
- 1 beef hot link
- 2 slices white bread
- ½ cup canned beef chili
- 1–2 slices American cheese
- 1 teaspoon cooking oil
- 1 tablespoon diced yellow onion
- Yellow mustard and hot sauce, to taste
Instructions
- Garlic Sausage Sandwich: Butterfly each Evergood Garlic Sausage link lengthwise without cutting completely through. Sear cut-side down in a hot skillet with 1 tsp oil for 2–3 minutes until browned. Fry eggs in butter, season with salt and pepper, and top with cheese to melt. Toast white bread in the pan drippings. Layer: White bread → garlic sausage → spinach → tomato → cheesy fried egg → white bread.
- Fried Bologna Sandwich: Make 3–4 small cuts around the edge of each bologna slice to prevent curling. Fry in a hot skillet for 1–2 minutes per side until edges are browned and slightly crispy. Fry egg, melt American cheese over top, toast white bread in leftover butter, and assemble.
- Chili Cheese Hot Link Sandwich: Butterfly the hot link and sear cut-side down until deeply browned. Warm the canned chili in a small saucepan. Toast white bread lightly. Place hot link on toasted bread, spoon hot chili over top, add American cheese to melt, top with diced onions, mustard, and hot sauce.
Chef Ken's Notes & Storage
Chef Ken's Tips
• White bread works: White bread is the foundation for these classic throwback sandwiches.
• Butterfly the sausage: Slicing the sausage or hot link lengthwise keeps it from rolling out the back of the sandwich on your first bite.
• Toast in the drippings: Don't waste the pan drippings after searing the sausage or bologna — toast your bread right in the skillet.
