Ingredients
For the Chicken
- 4–5 chicken drumsticks
- 1 tablespoon cooking oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
For the BBQ Chicken
- ¾ cup BBQ sauce
- 1 tablespoon honey
- 1 teaspoon Worcestershire sauce
- ½ teaspoon smoked paprika
For the Loaded Fries
- 1½ pounds frozen French fries
- 1½ cups shredded cheddar cheese
Optional Creamy BBQ Drizzle
- ¼ cup BBQ sauce
- 2 tablespoons mayonnaise or sour cream
- Small splash of water, as needed
Garnish
- Sliced green onions
Instructions
- Season the Chicken Preheat your oven to 425°F. Pat the drumsticks dry with paper towels and place them in a large bowl. Add cooking oil, garlic powder, onion powder, paprika, kosher salt, and black pepper. Toss everything together until the chicken is evenly coated. And yes, season all sides. If one side of the chicken is pale and confused, you're not done yet. 😂
- Bake the Drumsticks Arrange the drumsticks on a lined sheet pan, leaving a little room between each piece. Bake at 425°F for 35–45 minutes, flipping them about halfway through. Chicken is safe to eat once it reaches 165°F internally, but for this recipe, I like taking drumsticks closer to 175–185°F so the meat gets more tender and pulls off the bone easier. Once cooked, remove from the oven and let cool just enough to handle.
- Pull the Chicken Remove the skin, bones, and any cartilage from the drumsticks. Shred or pull the meat into bite-sized pieces. Don't shred it into dust — we want people to actually see chicken on these fries. This is BBQ chicken loaded fries, not a scavenger hunt.
- Make the BBQ Sauce Mixture In a bowl, combine BBQ sauce, honey, Worcestershire sauce, and smoked paprika. Stir until smooth. Add about ½ cup of the sauce mixture to the pulled chicken and toss gently until coated. Save the rest for finishing. You want the chicken saucy, not swimming. If you need a spoon and a life jacket, you went too far.
- Caramelize the BBQ Chicken Spread the sauced chicken onto a sheet pan. Place it under the broiler for 2–4 minutes, watching carefully. You're looking for slightly charred, sticky edges. This little step takes the chicken from "I put BBQ sauce on leftovers" to something that actually tastes intentional.
- Cook the Fries Cook the frozen fries according to the package instructions until they are extra crispy. And I mean extra crispy. Once we add chicken, cheese, and sauce, the fries are naturally going to soften a little. So starting with limp fries is setting yourself up for disappointment.
- Build the Loaded Fries Spread the crispy fries onto an oven-safe platter or sheet pan. Sprinkle about ¾ cup shredded cheddar cheese over the fries. Add the BBQ chicken evenly across the top. Finish with the remaining ¾ cup cheese. Now we're talking. This is the part where "budget meal" starts looking real disrespectful. 😂
- Melt the Cheese Place the loaded fries back into the oven for about 3–5 minutes, or until the cheese is completely melted. If you want a little extra browning, give it a quick broil at the end. Just watch it closely — melted cheese goes from beautiful to "why does it smell like that?" real fast.
- Make the Creamy BBQ Drizzle If using, mix together ¼ cup BBQ sauce, 2 tablespoons mayonnaise or sour cream, and a small splash of water. Stir until smooth and thin enough to drizzle. You want it loose enough to make clean lines across the fries without turning the whole plate into sauce soup.
- Finish and Serve Drizzle a little of the remaining BBQ sauce over the top. Add the creamy BBQ drizzle, if using. Finish with sliced green onions. Serve immediately while the fries are still crispy and the cheese is hot. One cheap pack of drumsticks. Three completely different meals. And for the finale? BBQ Chicken Loaded Fries. Because we're eating on a budget. We are not eating sad. There's a difference. 😂
Chef Ken's Notes & Storage
Chef Ken's Tips
• Meal #3 of the $10 Chicken Drumstick Series: The finale. Same budget pack of drumsticks stretched into a third completely different meal.
• Extra crispy fries: Start with fries that are extra crispy because the toppings will soften them. Limp fries + heavy toppings = disappointment.
• Caramelize the chicken: That quick broil on the sauced chicken is what takes it from leftover behavior to intentional. Watch it closely.
• Don't shred too fine: You want people to see real pieces of chicken on these fries, not a fine paste.
Budget food. Not struggle food. There's a difference. 😂
